Lobiani (Georgian Bean Bread) recipe

Vegetarian By pre-order

Lobiani is khachapuri's cousin, filled with spiced mashed beans instead of cheese. In Racha it is made with smoky bacon; the plain version is vegan and is what Georgians eat on Barbaroba, St Barbara's Day, in December.

Not on the regular Deda menu. Want it cooked for you in Vancouver? Order it ahead for catering or a family dinner.

Ingredients

  • 500 g all-purpose flour
  • 280 ml warm water
  • 1 tsp instant yeast
  • 1 tsp sugar and 1 tsp salt
  • 3 tbsp oil
  • 500 g cooked red kidney beans
  • 1 onion, finely chopped and fried
  • 1 tsp khmeli suneli
  • 1 tsp ground coriander
  • Salt and chili to taste

Method

  1. Knead the flour, water, yeast, sugar, salt and 2 tbsp of oil into a soft dough and let it rise for an hour.
  2. Mash the beans with the fried onion, spices and salt into a thick paste. It should hold its shape.
  3. Divide the dough in 2, flatten each piece, put half the beans in the middle and gather the dough over it like a pouch.
  4. Turn it seam side down and press it out into a round about 1 cm thick.
  5. Bake at 230°C (450°F) for 15 to 20 minutes, brush with oil and serve warm.

Tamara's tip: the filling must be dry, like thick hummus. Wet beans tear the dough.
