Khinkali in Vancouver: hand-pleated, with broth inside
Khinkali are the dumplings of the Georgian mountains: thin dough, at least 19 pleats, juicy meat and a mouthful of hot broth. Deda folds every one by hand and is bringing them to Vancouver by delivery, catering and pop-ups.

Coming at launchHow to eat khinkali
Pick it up by the knot. Bite a small hole, drink the broth, then eat the rest. The knot stays on the plate, and Georgians count the knots to see who won. Add plenty of black pepper. Forks are not part of the tradition.
Khinkali we plan to make
Kalakuri, the city style with beef, pork, cilantro and spices, comes first. We would love to add mtiuluri, the mountain style with only meat, onion and pepper, and vegetarian khinkali with mushrooms or cheese. Tell us on Instagram which one you want at the first tasting.
