Gozinaki (Georgian Honey Walnut Brittle) recipe

Vegetarian By pre-order

No Georgian New Year table is complete without gozinaki. It is just two ingredients, walnuts and honey, cooked together and cut into diamonds while warm. Georgians believe the sweetness on New Year's Eve makes the whole year sweet.

Not on the regular Deda menu. Want it cooked for you in Vancouver? Order it ahead for catering or a family dinner.

Ingredients

  • 500 g walnuts
  • 250 g honey
  • 1 tbsp sugar
  • A little water for your hands

Method

  1. Toast the walnuts in a dry pan or at 180°C (355°F) for 8 minutes, cool and chop roughly.
  2. Bring the honey and sugar to a boil in a heavy pan and cook 3 minutes.
  3. Add the walnuts and cook on low heat for 8 to 10 minutes, stirring, until the honey turns amber.
  4. Tip onto a wet board or parchment and press to 1 cm thick with a wet rolling pin.
  5. While still warm, cut into diamonds. Let them set for 1 hour.

Tamara's tip: use a strong local BC wildflower honey. A mild honey makes gozinaki taste flat.
